“In the early spring of 2002 Leo Downey of Sanctuary
Retreat & Buffalo Ranch ventured up the Kicking
Horse Valley to Field, BC to see if we were interested
in selling buffalo in our gourmet bistro. Having never
eaten buffalo before, we were unsure of this products
taste and appeal but had heard that buffalo, especially
free-range organic buffalo, was a real treat. Because
we were also looking for a new BBQ product to sell
in our bistro, the two rib eye steaks Leo gave us
were definitely worth trying. Maybe buffalo rib eye
steaks could round off our BBQ menu? After eating
the steaks we were definitely sure that our clients
would love this product.
My
wife and I operate a very busy bistro in the Rocky
Mountain National Parks in Canada. We have an established
reputation for excellent food, we create all our recipes
and take great pride in the products we purchase,
prepare and sell. During summer months our clientele
is truly worldly: they come from all corners of the
earth speaking a multitude of different languages
and most often dam hungry after spending a day hiking
in the rugged Rockies. Our servers are trained with
regards to our foods and wine and this past summer
we truly pushed the Buffalo steak as an authentic
North American meat that is tender, flavorful and
unique. To add to the buffalo, we plate an 8oz rib
eye with a lemon pepper rosemary baked potato, a grilled
vegetable brochette, our herbed garlic sour cream
sauce and Port reduction made with marjoram and Saskatoon
berries. To our delight, and may I say also Leo’s,
we have consistently sold out on our buffalo rib eye:
our clients love the product, are delighted with its
tenderness and gentle flavours, and to our surprise
buffalo either matches or sells better than AAA Alberta
Beef New York steak.

to have once or twice a year in a restaurant. But
after 5 days of eating this clean meat and seeing
the space in which these beautiful animals live and
the care and respect with which they are treated,
I knew that I wanted it in my weekly diet and ordered
a whole quarter. I
also wanted my friends to experience this tasty, energizing,
and incredibly light food, so my family and I organized
a buffalo tasting party for when Leo and Karen came
to deliver our meat. What a feast! And what a special
time for everybody who came. Rib-eye stakes that melted
in your mouth, tri-tip cooked to perfection over beer
steam, Galloping Goose's gourmet curry sausages, slow
cooked ribs and roast. And to top it off terrific
music from Leo and Pat. Our friends still talk about
that party and are now buffalo meat eaters.”

impressed with its nutritionals. I did sear and slice
one of the steaks: it cooks beautifully and tastes
clean: a little goes a long way. I roasted the Top
Sirloin, and am very impressed...very little saturated
fat, and only modest shrinkage, and excellent flavor
with a roasted peach-manzano-sage marinade.
